ABOUT US & OUR PRODUCTS

It began in the summer of 1992 when Carl Goulet began making cookies to sell at a local farmer's market in Windsor, Vermont. Carl had worked as a pastry chef and baker most of his working life and was employed as Executive Chef at a local hospital. Christopher's Cakes & Pastries, named after his oldest son, was a part-time venture that produced cakes, pastries and wedding cakes on the side. Carl's cookies had always enjoyed popularity throughout his career so it was a logical choice of product to produce in larger quantities.

Carl's employer allowed him to rent time in the kitchen after hours and along with selling on a table at the farmer's market, he began getting them into local stores and soon developed a rabid and loyal following. Chocolate Chip, Gingersnap and Shortbread cookies constituted the starting product line. In five years sales had grown and he had outgrown the time and space available and it was time to plunge in full time. With an investment in production equipment and a separate production space, the company incorporated and included Maple Shortbread, and Hermits to the Covered Bridge Cookies product line.

Our cookies have no trans fats and are made with the best ingredients from Vermont based companies. Butter from Cabot, Chocolate from Barre Callebaut of St Albans, and unbleached and unbromated flour from King Arthur Flour are used along with natural flavorings. We use small batch production techniques that produce an unmistakable home made taste unlike mass-produced cookies. Unpretentious, old fashioned goodness is what defines Covered Bridge Cookies.

 

 

 

 

 

Chocolate Chip


An all-time favorite. They’re different because they taste home-made! Many of our customers have written telling us so. They are not too soft or too crisp and have such a high concentration of chips that our depositing equipment has difficulty dropping them. Although their sizes may vary, packaged weight is consistent. They look home-made too.

 

 

Gingersnaps


A cult has developed that is passionately devoted to these cookies. Customers have been reported to be distraught if they are out of stock. They are snappy, chewy and contain a special combination of spices that leap with flavor. Classic Gingersnaps have a clean and honest quality and are the cookie that “cookies and milk” demand.

 

 

Maple Shortbread


The subtle flavors of fresh Vermont creamery butter and maple blend into a unique taste of old New England. Maple Shortbreads are light and delicate enough for tea but satisfying on their own. They are a special indulgence sure to be popular with seasonal as well as regular customers.

 

 

Hermit Cookies


An old fashioned New England tradition with its roots in colonial history. Dark and chewy with raisins and molasses, these cookies will take you back to the homemade goodness of a time gone by. They are our best selling product and for good reason. They are distinct and incomparable.

 

Shortbread


Made with real Vermont creamery butter, our shortbreads have a rich, clean flavor that will melt in you mouth. They are light yet satisfying and perfect for any occasion.
